Protein-packed vegan meals using a Trader Joe’s shortcut

I met up with a friend for lunch recently. After reading my book, Living Vegan, she transitioned to a mostly vegetarian diet. She was asking how I get enough protein as a 50-year-old who's trying to protect muscle and strengthen bone health.

I was telling her the usual things - tofu, edamame, seitan, beans, nuts, seeds, vegan meats...

But when I mentioned lentils, she said she'd never worked with them before.

I explained that dried lentils are super easy to make. They only take 20 to 30 minutes to prepare, and they're cooked in a similar fashion as rice.

But if you really want to make it easy on yourself, use pre-cooked lentils. I often pick up a package of steamed lentils from the refrigerated section of Trader Joe's.

They have 10 grams of protein per serving, and can be enjoyed hot or cold. They're good in bowls, wraps, salads, or soups. They're also a great starting point for tacos, chili, and veggie burgers.

With that conversation in mind, I rounded up some of my favorite ways to use Trader Joe's steamed lentils.

Don't have a Trader Joe's near you? No problem! All of these recipes can be made with any store-bought or homemade cooked lentils.
